- You will need two packages of boneless skinless salmon.
- One half cup of chopped red onion
- A half cup of peas
- Two tsp of mayo
- and your favorite rolls
- In a bowl mix the salmon, onion,mayo,peas
- season to taste salt, pepper, etc
- mix and chill for an hour
- Next slice open roll spread a little Salmon flavored cream cheese on roll
- Add salmon salad and top with Cole slaw
- Just have some fresh fruit on the side. This is a quick mid week meal your family will love it.

quick dessert biscut
- get your favorite biscuts from the local store
- bake according to directions
- when biscuts are done top with your favorite toppings
- i used blueberry pie filling and cool whip
- slice open biscut add a couple spoon fulls of blue Berry's
- add a spoon full of cool whip serve warm
- serve with your dinner as dessert your family will love you for it.

Whole roasted chicken and tomato salad
- Wash your chicken season with your favorite seasonings.
- Put one half a cup or chicken broth in the bottom of the pan
- Cut and cube one small onion and bell pepper.
- Put the cut veggies in the pan cover with foil put in oven
- Pre heat oven to 350 degrees bake chicken for an hour and a half or until done.
- Half way through cook time turn chicken over let it brown on both sides
- When chicken is almost done remove the foil.
- Slice a medium tomato fan it on the plate season with a little salt and pepper
- Drizzle a little olive oil and vinegar on top garnish with shaved carrots and radish.
- Choose your side dish i made red beans and rice
- Follow directions on package for the rice and red beans
- Dice a small onion
- When red beans and rice are done add the diced onions and some red pepper flakes and salt to taste
- Hint when making rice use chicken broth to add a little flavor to your rice
- Make sure you soak your beans the day before so that they will get nice and soft when you cook them.
- It also helps if you bast your chicken while it cooks and let it rest for 15 minutes before you cut it so that it stays juicy.
- This is a quick and easy meal even your pickiest eaters will love.

- Pier one is another great store to shop for table scape ideas Target is great too
- Remember simple is best.
- i choose a snow flake theme and my colors are blue and white.
- I found the table clothe and place mats at the dollar store
- I found the snow flake cups in target
- i created the center piece out of winter flowers and put them in a vase
- I added the candy canes and the snowmen for a fun festive look.

- Marinade your turkey the night before in your favorite marinade. I used Italian dressing, garlic powder, seasoning salt and a onion and Cajun spice
- season turkey put onion in cavity
- pour marinade on it and in the bottom of the pan.
- cover let set 24 hours in frig.
- Bake the next day at 350 until core temp reaches 160 and its golden brown.
- i marinaded my ribs and my lamb the same way and baked until done
- desserts can be made the night before and keep in the frig if needed.
- have music playing softly
- have after dinner games ready to play.

cranberry glazed cornish hen with garlic mashed potatos
- Get two Cornish Hens ( this will serve a family of 4) open and rinse under cool water
- Place in a baking dish season with a little salt and pepper on both sides cover and bake at 350 for 2 hours
- When half way through cooking time turn hens over and continue to cook.
- When hens are almost done glaze with a can of cranberry sauce. Put cranberry sauce in a bowl and add a pinch of sugar warm in the microwave for a minute and stir. Then brush on hens and let it cook on both sides until golden brown.
- Bring a cup of water to boil. cut and peel five large potato's, add to boiling water with a pinch of salt. Let cook until potato's are soft. Drain water add half cup of milk and a stick of butter and a tsp of garlic powder.
- Stir until smooth and creamy.
- In a pot warm up a bag of frozen vegetables your choice.
- Make cornbread muffins follow directions on the package
- For dessert try making a plum Carmel crumble.
- You will need a can of plums, a cup of oats, a half cup of sugar tsp, of cinnamon, a half cup of flour , and a slash of milk, and a stick of butter.
- Put plums in a small baking dish, take out pits, add a tsp of sugar .
- in a bowl mix your flour, oats,sugar, cinnamon, and butter ( it should be clumpy) then add milk and stir.
- Put the oat mixture on top of plums and bake for and hour. (You can top it with ice cream of whip cream or Carmel if you like) let cool for about ten minutes and serve.You can have a tasty meal for four in no time at all

soup,salad and bread with a twist
Sometimes its not what you make but how you present it. Make any night of the week feel Special. I used store bought soup and ready made salad, and can of biscuits, and a round loaf of rye bread. I turned the oven on low broil. Then i cut a circle in the middle of the bread and scooped the bread out. I put the top portion of the bread aside for use later as a garnish for the soup. Then i warmed the soup in a pot on the stove for about four minutes. I placed the hollowed out bread on a baking sheet and baked to for about two minutes just to make it crispy. Next i took the bread out of the oven put it on a plate and poured the warm soup into it. I followed the directions on the back of the package for the biscuits. I baked them until golden brown. When they were done i took them out of the oven and buttered them while they were still warm. Then i placed them on a plate as well. I poured the premix salad in a nice glass bowl and added cheese, tomatoes cucumbers, and salad dressing. I tossed the salad right before i served it. This meal is quick and easy and can make any night of the week feel like date night.
